In "Trappist - Het bier en de monniken" by Jef van den Steen, which is the most authoritative book on Belgian Trappist beers I know, the German brewer was named Hans, not Martin, and he was not the master brewer of Orval. He was also not the first brewer (he arrived a year after the brewery had started operations). While he certainly contributed to the beer we know today, he cannot be given credit for it.

As far as the "rebuilding" of the brewery, it was an expansion, not a reworking. If anyone has authoritative information with more detail, please contribute. Mikebe (talk) 14:02, 16 April 2008 (UTC)Reply

1 - not written in the book but at least, it seems that the name on the grave in the orval cemetery is Martin Pappenheimer....maybe did he have two first names, or maybe the local people called him Martin because Hans was, well, too...german, only a few years after the great war; I don't know the real answer. But, on his grave : Martin

2 - You confuse the first brewer with the first MASTER brewer. I can brew beer at home but I am not expert enough to brew quality beer (quality, stability, ability to reproduce taste from batch to batch) and so : I am not a MASTER brewer (or we could say today : brewing engineer). The first advisor for the brewery was Van Sande : being advisor does not make him Master Brewer. Lay people were engaged to brew under his advices. The book states that Van Sande refused to work in the brewery. He may have launched the first batches then given advices to lay workers, but it is stated that the quality of the beer was too variable (that means, in clear terms : not so good), that is why about a year later, Pappenheimer was hired, as the first MASTER brewer, and he CAN be given credit for that. Pappenheimer stayed in Orval for 10 years. He made the beer : good (and better than it was before he arrived) and of a stable quality from batch to batch , he introduced high hopping levels and the use of aromatic hops : he is the father of the beer that we know today.

Hey, from this article, it's impossible to get back to the french "Orval (bière)" article, but from that article you can arrive on this article thanks to the Orval Beer redirect page.
