No idea about Zappa, but 'Wilco Tango Foxtrot' is not a tribute the band Wilco... it's using (somewhat) the phonetic alphabet for WTF. the 'W' is normally 'Whiskey' but in this case, it being a beer and all, they didn't want anyone to get the wrong idea about what was in the bottle... I believe I saw this brand once. Thinking about the name, I assumed it was a multi-faceted play on words. One of those facets being in reference to Yankee Hotel Foxtrot, with the others more in regards to that which you refer to.
The Zappa beers were limited releases commemorating the 40th anniversaries of Zappa's early albums. I only ever recall seeing Freak Out!, Absolutely Free and Cruising with Ruben & the Jets. Stories about Gail Zappa's modern-day control of her husbands oeuvre are legend, so who knows if there were more beers planned and the licensing deal fell apart.
