Description:
Spider roll is a tradition food in Japan which is using the crab, rice, vegetables and seaweed. This dish does not use spider, it is made with seafood. Spider roll is a type of Maki zushi which is wrapping all ingredients in nori. In normal conditions, the restaurants not only use the crab also add another raw fish in it. Also, spider roll cooks will add the sushi vinegar to the cold rice in order to separate the grains and cover the fishy. Some of the chefs will put crab legs on the plate then let this dish looks like a spider. Interestingly, in Japan, most of spider roll cooks are male and they all very patient.

Background
Overview :
Spider roll belong to the sushi. It is descended from the earliest form of sushi. The mean of sushi is “sour-tasting" and comes fromし (shi) and 酸い sui. The flavor of overall dish is sour, umami and savory. ( Japanese dictionary,1988 )
History :
Sushi originates in Southeast Asian and famous in Japan.The earliest form of sushi is called narezushi (“salted fish”) which is used the fermented rice with salt to prevent the fish from spoiling but discard rice before eat fish. ( Amelia,2007) The development of sushi can roughly divide into three parts that Muromachi period, Edo period and today. During the Muromachi period ( 1336-1573), a type of sushi called namanare become popular which is using a part of raw fish wrap in rice. Then, sushi get the further developed in Edo period (1603-1868) that called haya-zushi. It is a first time that rice is not being used for fermentation. People start mix the vinegar with the rice and add the vegetables, raw fish or other dried food in it. This dish still popular today. ( Dave,2010) Nowadays, a new form of sushi called nigirizushi. It is making rice into a rectangle then put a slice of fish drape over it. Therefore, the different times people have different ways to make sushi.
Wobble-plate of spider roll
Spider roll ’s wobble-plate can roughly separate into two parts. One is simple another is newfangled.
Simple :
Firstly, is simple. Lots of pictures and documentaries show the “Ultimate simplicity leads to purity” which is conveying the wobble-plate is very purity. Simplicity is putting the spider roll on the plate with the pickled garlic. Roll's location always depend on the number of sushi and the shape of the plate. If chefs have one or more spider roll they will line up and put them in the middle of the plate. If cooks have a circle plate, they will put the sushi in a circle. Some of the chefs will put the crab legs beside the plate and let this dish more like a spider. (David,2011)
Newfangled :
Secondly, is newfangled. Spider roll will not put on the plates or other normal containers. Chefs put the spider roll on human body. For example, a man or woman lie on the table, the cook will puts spider roll on his legs, arms and stomach.(Diagonal view,2015)
Spider roll recipes
The basic ingredients of spider roll are soft shell crab legs (4 1/2-ounce), cucumbers (16 pieces), avocados ( 16 pieces) , spicy mayonnaise ( 2 tablespoons) and seaweed (4 sheets).Here are 9 steps to make spider roll:
(1), Prepare all the ingredients and tools, like gloves and a bamboo mat.
(2), Get some sushi rice.
(3), Add some sushi vinegar( 2 tablespoons) to the rice.
(4), Get a seaweed and put on the bamboo mat.
(5), Spread the rice on the whole seaweed.
(6), Place each fillings.
(7), Roll sushi.
(8), Slice sushi roll.
(9), Prepare your favorite sauces like spicy mayonnaise, soy sauce or mustard.
Furthermore, spider roll is a type of Maki zushi. It is generally wrap the ingredients in nori but occasionally wrap food in soy paper or perilla leaves. Besides, this sushi usually cuts into six or eight pieces. Therefore, it is very easy to make this sushi. (Lorrie, 2003)
Nutrition—Spider roll
The main ingredients of spider roll are fresh seafood (crab, raw fish), fresh vegetables (cucumber, avocado) and nori which is good for human’s healthy. Like the seaweed has a rich protein, it can provide energy.
Seafood :
Most of seafood have the omega-3 fatty acids that is an unsaturated fatty acid. Omega-3 fatty acids can help people’s cardiovascular and natural anti-inflammatory compounds also deliver some big health benefits. ( Freydis, 2018)
Cucumbers :
Cucumbers also have lots of benefits. Firstly, they can keep human body hydrated because this vegetables can provide 95% of water and useful vitamins especially vitamin C. Secondly, prevention of cancer, cucumbers include some components that can help in lowering the risk of prostate cancer or other cancers. Thirdly, improve digesting, now, lots of people have the gastrointestinal problems, this vegetables can help people’s digestion and remove toxins. Finally, oral health, it can strengthen our teeth and kill bacteria. (Anne, 2015)
Avocado :
Avocado has the natural fat which is playing a important role in human body metabolism. Also, avocados have lots of nutrients there are vitamin K C B5 B6 E, floats, and potassium. Besides, eat avocados can help people lower cholesterol. Furthermore, avocados include powerful antioxidants that can protect our eyes. ( Kris, 2018)
Spider roll’s health risks
The spider roll includes seafood and seaweed also taste spicy because spicy mayonnaise. So this sushi is not friendly to people who allergic of seafood or can not eat spicy. The signs of seafood allergy are skin rashes, swelling of the lips, nausea & vomiting, asthma and dizziness. ( Michael Jacquelyn, 2017)
Furthermore, the tuna, raw fish especially the large marine apex predators have the high level of methyl-mercury especially bad for the children and nursing mothers. Mercury is kind of neurotoxin, it can let people loss their peripheral vision, muscle weakness, headaches and insomnia etc. If the pregnant woman eat seafood which contain methyl mercury it will influences baby’s cognitive thinking, attention, memory, language and visual spatial skills. ( EPA, 2017) Therefore, spider roll is a double-edged sword.
Five attributes
Every great chef all need these five features no matter what kinds of sushi they make. They must perform on the highest level, always improve their skills , keep clean, impatient to become better and enthusiasm.
(1). Perform on the highest level that the cook always has the high standard for self-discipline.
(2). Always improve their skills can “keeping pace with the times” then not eliminate.
(3). Keep clean is the most important and basic things. If the restaurant, chef and ingredients are not clean, the food isn’t going to taste good.
(4). They always impatient to become better and never satisfied with their work, spend lots of time practicing their skills which can let themselves progress.
(5). People all said “Interest is the best teacher”, enthusiasm is one of the foots of successfully it can let people learn more and push themselves toward. (David,2011)
Sushi Restaurant
JIRO’s restaurant :
The most famous Sushi restaurant is in the Japan called Sukiyabashi Jiro. The main chef is Jiro, he spends more than 60 years making sushi. Now, he is 94 years old. This restaurant played host the Obama and acclaimed “ No.1 Sushi restaurant in the world”. The recommend menu is HIRAME (HALIBUT), AJI (HORSE MACKEREL), AKAMI ( LEAN TUNA), Spider Roll and so on. ( David, 2011)
