Just a few years ago a lot of malatang in Beijing was a soup. And the spelling 麻辣汤 is still reasonably common online. You would pick skewers of raw ingredients to be boiled into a bowl of soup for you. Now I do not find that. Mostly, as the article describes, you choose from skewers already cooked in broth. Often there is no table but people stand around eating. In some restaurants you collect a basket of raw skewers and they are boiled for you and covered in sauce but not much broth.
